I am a Microbiologist, specialized in consumer products and quality assurance. I am also the Founder and President of Quesos Vaca Negra, the first aged cheese factory in Puerto Rico. We make aged cheeses with raw milk using old European recipes. This is a cheesemaking experience, We will explain details about the milk production in PR, talk about the milking cows, and the appreciation or character of an aged cheese and finally will make one of our five varieties of cheeses. Our cheesemaker will decide the cheese recipe we will be preparing that day. During the morning our cheesemaker will explain the process of cheese and you will get to…

This is an artisanal cheesemaking factory, bring comfortable clothing and shoes. We have a nice selection of herbs and spices, but you can bring your own. .

Your Aged Cheese
We will provide fresh cheese curd and spices. Your cheese will age in our cellar for two months.
Wine
We will provide a glass of wine to pair with the cheese samples.
Your Aged Cheese
We will use a 12onz mold, to shape the fresh cheese curd and spices. Your cheese will age in our cellar for two months.
Cheese and Yogurt Samples
You will sample our five varieties of cheese, and our yogurt flavors. Trying all of the flavors is subject to availability.
