In Kyoto, we have our tea culture from long ago and brew each tea carefully one by one. But did you know that the Kyoto prefecture's annual consumption of coffee beans is the highest in Japan? Get ready to experience Japanese coffee style and culture. I will teach you about pour over coffee, a common and popular Japanese method to make coffee, and you'll learn how to use this process by yourself. Then you'll taste your coffee using a traditional matcha bowl with seasonal wagashi—sweets. Through this experience, I would like you to learn that the same coffee beans have different flavors depending on how they are brewed, and it’s not about which one is the best. Instead, I want to assist you in finding out which beans and brewing methods are “your” best. Please enjoy our Japanese traditional style. Kazuki will help with any translation.

I've been living in Kyoto for 20 years and have worked in the coffee industry for almost ten. I’m now the owner of a café and am a professional coffee brewer, so to speak. The impetus for starting my own café was because it allowed me to get to know about specialty beans in different countries and their unique characteristics. It also enabled me to learn the different brewing methods and how this changes the taste itself—which is exciting to me. I would like to tell everyone about the charms of coffee. It gives us a smile and conversation with just one cup, and I believe it's a magical drink.

The staff were super informative and really patient! They also explained everything in English which was useful! We learnt a lot and had a fantastic time! すごくいい経験でした!思ったより楽しかった。コーヒーについていろいろ勉強になりました。機会あればぜひ行ってみて下さい!

Yoshihisa's coffee shop is upstair of a wooden house. It's a small but very cozy place. I had a chance to see many professional coffee making equipments. Yoshihisa and Saki taught me a lot about coffee: different types of coffee, flavors, etc and more importantly they taught me how to make a delicious drip coffee cup. They were very kind, they even wrote notes down on the board and they let me try brewing several types of coffee. Those were incredibly delicious! They even let me tried Dorayaki, which goes so well with coffee. We also talked about Kyoto and Yoshihisa was very happy to teach me some Kyoto dialects and some culture stories. I've learned a lot from this experience and I think it's very good chance to get to know more about coffee. It's hard to find a coffee shop where people are ready to teach you about coffee. I found it very helpful, enjoyable and I wish to come back with my friends to try this experience again in the future !

My coffee making experience was alright. I had expressed a bit more of a schedule/activities but it was just making coffee and tasting the different beans. Yoshihisa was very kind as was Saki, but Saki did all of the translating as Yoshihia’s English is minimal. The coffee was good and I drank a fair amount but I felt that there could have been more activity rather than just brewing the coffee. Kind of a felt like an expensive cup of coffee with a touch of personalization.

Great workshop! I started making pour over myself about four months ago and this workshop greatly helped to get to know more and improve my skills. The knowledge of the barista giving the workshop was very helpful in doing so. As a bonus I got to roast my own beans to take home!

Yoshihisa is superb, so is the girl with very lovely smiles. He manages a nice chic cafe in a tiny cutie place, very central location. We had lovely 2.5 hours together and I learned huge lesson for him about drip coffee. He even gave me a special latte copy righted by him which was very good. I bought some beans from him, very very good for my espresso machine. I think I will definitely come back for my next visit.
