Lacto-fermentation is an ancient way of preserving food. It enhances flavours and adds incredible nutritional value: beneficial bacteria. Probiotic foods like fermented vegetables can do wonders for the health of your gut, body and mind. In this fun and interactive workshop, you will learn how to successfully ferment various veggies with just a few basic tools and ingredients at home. In a relaxed setting of my Portmarnock apartment, we will sample a few different kinds of fermented vegetables accompanied by some sourdough bread and snacks. I will tell you all about the origins of vegetable fermentation, how it works and why fermented veggies are good for you. Then together, with your help, we will prepare two jars of ferments using two different methods of lacto-fermentation: dry-salting and salty brine. I will need you to roll up your sleeves 'cause we will chop and mix and pound and pack them tight! I will share with you all my fermentation tips and practical advice as we go along. You will leave equipped with knowledge, inspiration and an illustrated step-by-step guide including easy recipes​ to try at home so you can start making your own health-boosting delights right away.

Polish-born, I grew up in kitchens with shelves heavy from jars of fermented vegetables. My mom has always had a beet kvass, gherkins or sauerkraut going and bubbling in the corner. Each season had its own ferment. I have rediscovered my native foods as an adult, living abroad, when they suddenly disappeared from my daily diet. I started to ferment my own vegetables and experiment with different recipes and techniques. I have fallen deeply in love not only with the complex flavours and decadent qualities of fermented veggies but also with the wonderful process of transformation it undergoes.

I will host the experience in my apartment in Portmarnock – a seaside village just a 20-minute train ride from Dublin city centre. Portmarnock is home to two of the best kept local secrets which most visitors to Dublin never see: the Velvet Strand beach; and the local wood-fired sourdough pizza place, Brezzi's. We're also very close to Howth, a wonderful destination for cliff-walking and seafood.
