The day will consist of brewing demonstrations and discussion on the biochemistry of brewing. You will observe the process and learn about all the full spectrum of beers you would find at craft breweries. All-grain brewing is creating beer from only grains without the use of extracts as a source of fermentable sugars. An all-grain brew day using the batch sparge method and requires specialized equipment. You will learn about the different pieces of equipment and the roll each piece plays in the brewing process. The ‘first’ stages of home brewing takes 4-5 hours and their will be down times, during which we will tour our hop field, learn about the history of hops in the Hudson Valley and discuss the different varieties of hops and the unique characteristics each brings to brew. If time allows, we will also meet the llamas and alpacas that live at the farm and many visit through our other Airbnb Experience. There will be opportunities to taste the product, at various stages, prior to the fermentation process and also a sample of the end product.
Other things to note
This Experience explains and shows the process of brewing from grains, leading up to the first stage of fermentation. Additional fermentation stages need to happen, into the next few weeks, before the beer is ready for consumption . We will provide sampling of past brews during your Experience.

Dr. Mike Tibbetts is co-owner of Clover Brooke Farm and Hyde Park Hops with Andrea Parent-Tibbetts. He is also a College Professor/Yeast Geneticist at a liberal arts college in The Hudson Valley for over 25 yrs. He is a Home Brewer who appreciates good beer, and understands the biochemistry of fermentation. His brewing experience spans over a decade in the brewing of beer, mead and cider. His style is casual but informative and based on his 27 years of college teaching, he welcomes curious individuals at his Learn How to Home Brew.

Le lieu

Most of the day will be spent, outside under a tent, at the brewing site, where you can stand and/or sit in chairs provided. You will be treated to pastural views with grazing animals throughout the day. Their will be brewing breaks, where we will lead a walking farm and hop field tour. Total walking could consist of 1/2 mile on pastured paths. Covered toed shoes and comfortable foot wear is encouraged to walk comfortably through pasture grasses.

Mike really knows the science behind beer brewing. He’s an excellent teacher and very down-to-earth. This class gave us the confidence to start brewing. And you can not beat the location — outdoors, under a covered structure, looking out over the fields with sheep, alpaca, llamas, and more. We learned so much — not just about beer, but about life on a farm. Highly recommended.

It was truly a fantastic experience at the farm. Beer making was fun and informational. The host was enthusiastic and knowledgeable. The whole experience was very engaging and insightful. We also had chance to meet the lamas, Alpacas, sheep’s, and goats etc. Can’t wait to try the honey they make on the farm!

Wow, where to start! I have so many wonderful things to say about Clover Brooke Farm; the welcoming atmosphere, self sustaining farm, the variety of happy and friendly animals, the generous extras provided for our class... but I'll stick with a review pertaining to our activity. I took a beer brewing class with two close friends. Our class host, Mike, is a brilliant beer enthusiast with a wildly impressive professional background. Clearly someone used to teaching, we spent 4+ hours going through the process of beer brewing, a tour, sampling and snacks. If you have any interest in beer brewing, or looking to get started, this is an amazing class for you. If you're anything else, this farm is for you!
