Au programme

At the arrival I will offer you breakfast, and I will give you a lab coat and a cap for the access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products.

I’m deeply connected to my roots. My grandpa was a producer of Parmigiano so as a child I could learn all the secrets of this cheese. We will see the places I have lived since I was a child, where my uncle still produces this cheese with the same passion that we share.I love conveying my knowledge to people from other countries, which I try to share the culture and traditions of my homeland with.

Claudio was a great host! He picked us up from the train station and shared the secrets of Reggio Emilia on the way to breakfast. Breakfast was delicious with some typical plates from the region. The cappuccino and the coffee bean was really good! Next we headed to the Dairy where saw the whole Parmigiano Reggiano making process. It was really enlightening. We also had the chance to get some fresh ricotta with the milk milked on the same morning. Doesn’t get any fresher than that. The maturation room is really a dream come true for all cheese lovers. Claudio is knowledgeable not only in the cheese but also Lambrusco, balsamic oil and as a native of the region a lot of the ins-and-outs of the region. Will definitely do it again!

My friend and I added this stop in Reggio Emilia to our week in Italy and the trip would not have been the same without it. Claudio is fun, organized, and his pride for his family’s history in Parmigiano Reggiano production beams throughout the tour. You will have a new found respect for the art of Parmigiano Reggiano and, like us, may clear all the available slices in the fridge at the end!! Such a special experience!

I’ve been in Italy for around 4 months now and this has to be one of the best things I did! They were so knowledgeable and the whole process was also just so cool! If you have the chance you should definitely do this!

Do this experience!! I looked at a few different tours like this one before deciding which to do, and I am soo glad that I decided on this one! Not only did we see the production facility, we also toured the dairy and had a tasting. The whole thing was both fun and informative. Claudio was am amazing guide that made the whole experience that much more special. He was very personable, and made it feel customized. I am so blown away!! 110% recommend this experience!

If you are even thinking of doing this, do not think twice. Book it. You will not be sorry. Claudio is wonderful and engaging. This is a very special, once in a lifetime experience. Be sure to do the balsamic experience too!
