Poulet au Vin Jaune d'Australie: chicken pieces finished in a funky wine/onion/sherry/stock/froie gras butter sauce with shiitake and crisp chicken skin.
Finish off for dessert with the torched meringue, maraschino cherries and buffalo milk yoghurt sorbet
