Cocktail chemistry. In the back of Momofuku Ssam. It's mixology taken to the limits. They centrifuge their juices so they solids are pulled out so it's clear liquid that tastes like pure grapefruit juice. And they make carbonated vodka, and chill your glass with liquid nitrogen. No lie.
